Upstate launches Meatless Mondays program

As part of its wellness programming, Upstate Medical University has instituted “Meatless Mondays,” where the university dining centers and cafe will highlight a meatless entree, such as broccoli tofu stir-fry and brown rice, every Monday. Meatless options are available every day at Upstate, but wellness planners say highlighting the meatless menu can help promote healthy eating. Syracuse University helped launch the Meatless Monday idea in the Syracuse area.
